Four layers made with two generous layers of genoise sponge soaked with amaretto-laced coffee syrup and two layers of zabaglione mascarpone cream, finished with a dusting of cocoa

The entire cake - a full EIGHTY cm in diameter, enough to serve around 100 guests - was surrounded by Savoiardi biscuits, piped and baked in-house, with everything from sponge to cream homemade (of course 😉)

"This very attractive ivory coloured cream cake has beautiful swirls on top and stunning quality fresh strawberries. It is beautifully light to cut and holds its form very well. The genoise sponge is very light, but we couldn't discern any brandy syrup. The strawberries have held their own in the filling and give some appealing contrasting texture and flavour. The cake is well balanced, and despite all the cream, is not overly sweet. Very well executed"

"A beautiful looking cake, this is massively creamy with lush bright red strawberries adorning it. Moist crumb, light and with that definite brandy hit, and then the more tart fruit, freshly complementing all of it. The generosity comes across in the flavour, which is well judged in terms of sweetness, and has a good mouthfeel too. We appreciated the delicacy"

"A delicate looking sponge in several layers. The strawberries look fabulously fresh and have kept their vibrant red colour even when sliced and layered between the sponge. The layers are light and airy and have a great flavour from the brandy syrup. The delicious fresh strawberry flavour marries beautifully with the brandy and beautifully soft sponge. The cream is carefully whipped and has kept its shape well. Sugar levels are well balanced. This is a great cake that feels is light as air when you eat it"

"This is such a pretty looking cake with its ripples of fresh cream and strawberries on the top and layers of sponge, strawberries and cream throughout. On tasting, it melts in the mouth. The genoise is so light, the cream is fluffy and fresh and the strawberries are sweet. This is so delicate and very pretty"
