14 Dec 25 What is Strawberry Shortcake?
The term shortcake originally referred to a cake made with shortening - a type of fat - which created a crumbly, “short” texture. This meaning comes from older American baking traditions in the late 19th and early 20th centuries
Over time, American restaurants began serving versions with sponge cake, cream and strawberries but the iconic style we know today is largely a Japanese creation
Development in Japan
While Western-style cakes were introduced to Japan in the late 19th century, it was local pastry chefs in the early 20th century who popularized the version made with soft sponge, whipped cream, and strawberries.
With the spread of refrigerators in the mid-20th century, the lighter-textured whipped cream replaced the heavier buttercream, making the soft, fluffy strawberry shortcake we know today possible
Strawberry shortcake became a symbol of Christmas in Japan especially after World War II, as refrigeration and greenhouse farming made strawberries available even in winter
In the 1970s, companies like Fujiya helped popularize the cake as a Christmas cake, making it a seasonal tradition. Beyond holidays, its pleasing balance of flavors and festive look also made it a favorite birthday cake
Strawberries were chosen for both aesthetic and taste reasons:
The bright red of strawberries contrasts beautifully with white whipped cream, creating a festive, celebratory look
The sweet-tart flavor complements light sponge and whipped cream
In Japan, the red-and-white pairing also evokes cultural symbolism similar to Japan’s national flag, making it suitable for celebrations
Born in Japan and cherished for generations, strawberry shortcake is a cake of delicate beauty and balance.

「ショートケーキ」のショートは、ショートニング(脂肪分の一種)を使用することで生まれる「サクサクした食感(ショート)」を意味しています。クッキーのようなサクサクとした生地をベースとしたケーキは19世紀末から20世紀初頭のアメリカにおける伝統的なスイーツだったのですが、やがてレストランなどでスポンジケーキ、クリーム、いちごを使った現在の日本のイチゴショートに近いバージョンが提供されるようになりました。
西洋菓子が日本に紹介されたのは19世紀末のことですが、ジェノワーズスポンジと生クリーム、いちごを使ったケーキが日本人パティシエたちによってイチゴショートとして一般に広められたのは20世紀に入ってからのことでした。
そして20世紀中頃に冷蔵庫が一般家庭にも普及すると、それまで使用されていたこってりしたバタークリームが口どけのよい日本人好みの生クリームに取って代わり、ケーキ屋さんの定番スイーツとして君臨するようになります。
戦後、冷蔵技術や温室栽培により季節を問わずいちごを仕入れることが可能になったことで、冬でもイチゴショートを製造販売することが可能になりました。
そして1970年代には、不二家など大手のケーキ製造業者が「クリスマスケーキ」として広く宣伝したことで、イチゴショート=クリスマスケーキが定番となりました。

国旗を連想させる赤と白の組み合わせは、ハレの日にふさわしい色とされている
簡単にイチゴショートの由来をご紹介しましたが、当店でもイチゴショートは一番人気の定番商品です。
日本で生まれ、世代を超えて愛されてきたイチゴショート、私は日本人の血を引くイギリス人パティシエとして、繊細な美しさとやさしい味わいを持つこの日本のケーキをイギリスでもたくさんの人に味わっていただいて、日本の文化のひとつとして広めていきたいと願っています。

After creating our first Tiramisu Wedding Cake at the beautiful Kin House a few months ago, we've had so many enquiries for it 🥰
Next year we’re already heading to Gosfield Hall, Blue Tin Produce and Syrencot, and there are a few more quotes out too - so who knows where we'll be next!
Our Strawberry Shortcake is another great option as a table cake, but so many other fruits can be used for it too!
And yes, we still do traditional wedding cakes as well. But even those won’t be the “standard” ones you see everywhere… they’ll have that little Tearoom Bambi touch - elegant and slightly unexpected, very us✨

23 Aug 25 Giant Tiramisu Wedding Cake delivered to Kin House Wiltshire
The photo doesn't do it justice but this Giant Single Tier Tiramisu Wedding Cake was actually MASSIVE in real life🫢
Four layers made with two generous layers of genoise sponge soaked with amaretto-laced coffee syrup and two layers of zabaglione mascarpone cream, finished with a dusting of cocoa
The entire cake - a full EIGHTY cm in diameter, enough to serve around 100 guests - was surrounded by Savoiardi biscuits, piped and baked in-house, with everything from sponge to cream homemade (of course 😉)
Kin House - an event venue in small village near Chippenham was one of the most beautiful places we visited and we felt so lucky to be there✨

"This very attractive ivory coloured cream cake has beautiful swirls on top and stunning quality fresh strawberries. It is beautifully light to cut and holds its form very well. The genoise sponge is very light, but we couldn't discern any brandy syrup. The strawberries have held their own in the filling and give some appealing contrasting texture and flavour. The cake is well balanced, and despite all the cream, is not overly sweet. Very well executed"

The layers are light and airy and have a great flavour from the brandy syrup. The delicious fresh strawberry flavour marries beautifully with the brandy and beautifully soft sponge. The cream is carefully whipped and has kept its shape well. Sugar levels are well balanced. This is a great cake that feels is light as air when you eat it"

We don’t often attend public events, but this one turned out to be a great success — we sold out all our cakes in just over two hours and even had to pack up early! On the menu were:
